Smoked Pulled Beef

Ingredients
- 1 (or more) 3-4lb Beef Roasts
- Beef Rub of your choosing
- 1 medium size onion
- Beef Broth
- Barbecue Sauce
Instructions
- Pat the Beef Roast Dry. Trim excess fat.
- Put the rub all over the meat.
- Preheat Traeger to 225F.
- Place Roast on the Grill with probe inserted.
- Cook until internal temperature is 165F. Verify with instant-read thermometer.
- Remove the roast, move the meat to a small baking dish. Scatter Onion all around. Put Barbecue sauce on top of the meat and fill the pan with a few cups of beef broth. Cover with foil and return to the grill with temperature set to 250F until the internal temperature reaches 204F.

This recipe started with the Trager pulled beef recipe. It is a simple smoke, for a great meal. I cook this most often with two Chuck roasts. I will also often pair this with smoked beans.
