Smoked Fries

Ingredients
- Potatoes
- Olive Oil
- Ground Black Pepper
- Red Pepper Flakes
- Cayenne Pepper
Instructions
- Slice 2 to 3 medium potatoes
- Mix in bowl with Olive Oil and Generous amounts of Ground Black Pepper, Red Pepper Flakes, and Cayenne Pepper
- Place on Pan (Or Foil-Pack-Pan).
- Cook for 45min to an hour or until they are as crispy as you prefer.

These fries will cook best above 350 degrees F, but can be cooked at the temperature as whatever main course you are cooking. I typically cook them on the left side of my smoker (which seems to be the hotter side) as I typically need more heat for these than whatever else I am cooking. I commonly cook these with chicken thighs, burgers, or meatloaf as they just take a few minutes to put together and then thow on the smoker that is already hot. Sometimes when I am doing more of a traditional smoke, when I pull the meat / main course off to rest at the end of the cook, I will turn the smoker temperature up higher to help the fries finish.
